Shrimp Creole
INGREDIENTS
4 slices bacon, cooked & crumbled
Use bacon drippings to sauté onions and
celery
2 large onions, chopped
2 stalks celery, diced
1 small bell pepper, diced
2 (14 1/2 ounce) cans whole tomatoes,
crushed by hand
1 (28 ounce) can tomato sauce
1 bay leaf
2 cloves garlic, minced (or adjust to taste)
3 dashes hot sauce (or to taste)
Salt and pepper to taste
Dash of Worcestershire Sauce
1 lb shrimp, peeled and deveined (if
desired)
2 tsp sugar

Cook onions, bell pepper, and celery in bacon drippings until
softened and translucent.
Add all ingredients except shrimp and sugar. Stir to combine.
Cook for 1 hour, stirring occasionally.
Add shrimp and sugar, then cook for an additional 4-6
minutes, or until the shrimp are cooked through.
Remove the bay leaf.
Serve over rice.
Garnish with parsley if desired.
